Barry G. Swanson

Barry G. Swanson has been at Washington State University for 35 years. He is a professor and serves as interim chair of the School of Food Science and executive secretary of the Faculty Senate.

Dr. Swanson is known worldwide for his research on digestibility of legumes, utilization of fat substitutes, and non-thermal processing systems. He authored or co-authored more than 200 peer-reviewed research manuscripts, nine patents, and contributed more than 40 peer-reviewed book chapters to the food science literature. Dr. Swanson is very proud of his opportunities to serve as advisor to 47 M.S. and 24 Ph.D. food science and human nutrition students.  Dr. Swanson is the retiring editor of the Journal of Food Processing and Preservation

Dr. Swanson was recently ranked 22nd among the most highly cited international authors in the agricultural sciences by Thomson Science Watch. Dr. Swanson received the College of Agriculture, Human and Natural Resource Sciences (CAHNRS) Excellence in Research Award in 2001, was elected a Fellow of the Institute of Food Technologists in 2002, and a Fellow of the International Academy of Food Science and Technology in 2006.
